  • 3 cups cauliflower florets

  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 4 tablespoons olive oil (extra virgin)
  • 2 garlic cloves, mashed with salt
  • Sugar, 1 pinch
  • 1/2 cup parsley, chopped (for garnish)
  • Crushed pepper, for garnish

How to Make

  • Step 1: Boil the florets for about 8-10 minutes in the water with salt in a medium sized pot.

  • Step 2: Drain and place them in a salad bowl.

  • Step 3: Whisk all the dressing ingredients.

  • Step 4: Immediately pour all over the cauliflower. Sprinkle the parsley and crushed pepper, toss.

  • Step 5: Cool.
