Ingredients

The ingredients are:
  • FOR BOIL
  • 2 quarts water
  • 1 tablespoon kosher salt
  • 8 ounces dry rotini pasta
  • FOR DRESSING
  • 1 1/2 cups mayonnaise
  • 1/3 cup lemon juice
  • 2 1/2 teaspoons chicken bouillon powder
  • 1 teaspoon Italian seasoning
  • 1 1/2 teaspoon crushed garlic
  • 8 ounces sweet onion (1/2 extra large sweet onion))
  • FOR REMAINING INGREDIENTS
  • 3 1/2 ounces sliced pepperoni (quartered)
  • 4 ounces sliced olives (drained)
  • 3 ounces sliced green onions
  • 4 ounces sliced celery
  • 5 ounces queso ranchero cheese (crumbled, or feta)

How to Make

  • Step 1: Add salt to water and bring to a boil. Add pasta and fully cook. (Al dente isn't enough.)

  • Step 2: Meanwhile, combine dressing ingredients in food processor or blender. Add to pasta immediately after draining.

  • Step 3: Wait until pasta has cooled before adding remaining ingredients.

  • Step 4: For the wedding, I made double batches, stored in 2 gallon jumbo ziplock bags, pressed flat and stacked up in the fridge. Makes it easy to transfer to icechest for transport.
