Step 1: Combine seeds, pepitas and amaranth in a bowl and add warm water and set aside, stirring occasionally for 20 minutes or until water is absorbed and then stir in salt and season with pepper.
Step 2: Preheat oven to 160C/140C fan forced.
Step 3: Line a large baking tray with baking paper.
Step 4: Spoon mixture onto prepared tray, spreading until 5mm thick and bake for 1 hour or until golden and crisp.
Step 5: Cool on tray.
