Step 1: Soak the noodles in hot water until soft. Drain and place in a bowl.
Step 2: Add the edamame beans, grapefruit segments, prawns and red onion.
Step 3: Mix the chili paste, ginger, fish sauce, sesame oil, grapefruit juice and the sugar, and pour over the salad.
Step 4: Toss and sprinkle on the fresh herbs and toasted sesame seeds.
