The ingredients are:
  • 100 grams rice noodles
  • 150 grams edamame (podded)
  • 1 grapefruit, whole (juiced)
  • 1 grapefruit, whole (segmented)
  • 200 grams shrimp (prawns, cooked and peeled)
  • 4 ounces red onion (1/2 onion, thinly sliced )
  • 1 teaspoon chili paste
  • 1 tablespoon ginger, grated
  • 1 tablespoon sesame oil
  • 1 tablespoon fish sauce
  • 1 teaspoon granulated sugar
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon mint, chopped
  • 1 tablespoon sesame seeds (toasted)

How to Make

  • Step 1: Soak the noodles in hot water until soft. Drain and place in a bowl.

  • Step 2: Add the edamame beans, grapefruit segments, prawns and red onion.

  • Step 3: Mix the chili paste, ginger, fish sauce, sesame oil, grapefruit juice and the sugar, and pour over the salad.

  • Step 4: Toss and sprinkle on the fresh herbs and toasted sesame seeds.
