Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon honey
  • 12 ounces green beans (haricots verse or small slender green beans, trimmed)
  • 2 oranges, whole (peel and white pith removed)
  • 72 grams green olives (1/2 cup)
  • 1/2 cup parsley leaves

How to Make

  • Step 1: In a small bowl whisk together first 3 ingredients (oil - honey); season with salt and pepper.

  • Step 2: In a saucepan of boiling salted water cook beans until crisp tender (under 5 minutes); drain, rinse and pat dry.

  • Step 3: Cut oranges in half, then crosswise into 1/3 inch thick slices; place them in a large salad bowl and add the olives, pasley, beans and dressing -- toss.
