Step 1: Sauté onion, green pepper, garlic in oil till transparent.
Step 2: Add sausage and brown fast.
Step 3: Add other ingredients.
Step 4: Cover pan and simmer VERY slowly for at least 3 hours, stirring occasionally and adding small amounts of boiling water if needed.
Step 5: Toward the end of the cooking time for the sauce, cook noodles in boiling salt water al dente (8 minutes). Drain well.
Step 6: Spread a thin layer of the sauce in the bottom of a buttered baking dish.
Step 7: Cover with noodles.
Step 8: Add a layer of mozzarella and dabs of ricotta.
Step 9: Add another layer of sauce, noodles, etc., till all are used, finishing with the sauce. Sprinkle top with Parmesan.
Step 10: Bake at 350' uncovered for 45 minutes.
