Ingredients

The ingredients are:
  • 8 ounces sweet potatoes (3 potatoes cooked as described below)
  • 3 to 3/4 tablespoons butter
  • 3 tablespoons brown sugar (plus)
  • 3 teaspoons brown sugar
  • 1 1/2 teaspoons grated orange rind (or lemon rind)
  • 9 tablespoons orange juice
  • 1 teaspoon salt
  • Paprika, pinch (or to taste)

How to Make

  • Step 1: Boil sweet potatoes in jackets by dropping them into boiling water to cover and cooking covered for about 25 minutes or till tender.

  • Step 2: Peel potatoes and mash thoroughly.

  • Step 3: Combine ingredients except for the 3 teaspoons of brown sugar and the paprika.

  • Step 4: Put in baking dish and sprinkle top with the remaining brown sugar and the paprika.

  • Step 5: Bake in a preheated 375' oven for 30 minutes.

  • Step 6: Remove cover and bake until brown.
