Ingredients

The ingredients are:
  • 125 grams butter, at room temperature
  • 3/4 cup firmly packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla essence
  • 3/4 cup all-purpose flour (plain)
  • 3/4 cup self-rising flour
  • 200 grams white chocolate (finely chopped, eating chocolate)
  • 1/2 cup chopped macadamia nuts (finely chopped)
  • 1/2 cup dried sweetened cranberries (craisins)

How to Make

  • Step 1: Preheat oven to 160C/140C fan forced.

  • Step 2: Line 2 oven trays with baking paper.

  • Step 3: Using an electric mixer, beat butter and sugar in a bowl until light and creamy and add egg and essence and beat until combined.

  • Step 4: Fold in combined flours until just combined and then stir in chocolate, macadamias and cranberries.

  • Step 5: Roll level tablespoons of mixture into balls and place on prepared trays, about 4cm apart for spreading flatten tops slightly and bake, swapping trays halfway for 15 minutes or until golden brown and then cool completely on trays (cookies will firm).
