Step 1: Preheat oven to 220C/200C fan forced.
Step 2: Grease and line a large pizza tray with baking paper.
Step 3: Place cauliflower in a food processor process until the mixture resembles coarse breadcrumbs.
Step 4: Place in a microwave bowl and microwave, covered on high (100%) for 5 minutes or until tender and drain and cool slightly.
Step 5: Using hands squeeze to remove excess liquid.
Step 6: Combine cheddar cheese, parmesan and egg in a large bowl and then transfer cauliflower to cheese mixture and mix well.
Step 7: Press mixture firmly over prepared tray and bake for 10 minutes or until golden brown.
Step 8: Spread passata over cauliflower base and top with chorizo, onion, capsicum and bocconcini and bake for a further 5 minutes or until the cheese melts and top with basil leaves to serve.
