Ingredients

The ingredients are:
  • 500 grams cauliflower, cut into small florets
  • 1/2 cup reduced-fat cheddar cheese, grated
  • 1/4 cup grated parmesan cheese (fresh)
  • 1 large egg (at room temperature)
  • 1/4 cup tomato passata (Italian Cooking sauce)
  • 130 grams chorizo sausage (cured and thinly sliced, 1 sausage)
  • 1 red onion thinly sliced
  • 1/4 cup sliced capsicum (char-grilled capsicum strips)
  • 100 grams baby bocconcini (drained)
  • Basil leaves, to serve

How to Make

  • Step 1: Preheat oven to 220C/200C fan forced.

  • Step 2: Grease and line a large pizza tray with baking paper.

  • Step 3: Place cauliflower in a food processor process until the mixture resembles coarse breadcrumbs.

  • Step 4: Place in a microwave bowl and microwave, covered on high (100%) for 5 minutes or until tender and drain and cool slightly.

  • Step 5: Using hands squeeze to remove excess liquid.

  • Step 6: Combine cheddar cheese, parmesan and egg in a large bowl and then transfer cauliflower to cheese mixture and mix well.

  • Step 7: Press mixture firmly over prepared tray and bake for 10 minutes or until golden brown.

  • Step 8: Spread passata over cauliflower base and top with chorizo, onion, capsicum and bocconcini and bake for a further 5 minutes or until the cheese melts and top with basil leaves to serve.
