Step 1: Using a small knife, cut drumsticks around the bone below the knuckle and holding the end and push meat down to form a rough ball and clean the exposed bone.
Step 2: Preheat oven to 180C.
Step 3: Line a baking tray with baking paper.
Step 4: In a bowl, combine sauces, sugar and garlic and add chicken, turning to coat and marinate of 20 minutes.
Step 5: Transfer drumsticks to prepared tray and bake for 45 minutes, turning halfway through cooking time.
Step 6: Garnish with coriander and spring onion and serve with plum sauce.
