Ingredients

The ingredients are:
  • 3/4 cup yellow onion, chopped
  • 1/2 cup green onions, sliced
  • 6 cloves garlic (large)
  • 3 habanero peppers (seeded and finely chopped)
  • 2 tablespoon fresh thyme
  • 1 tablespoon salt
  • 2 teaspoons fresh ground black pepper
  • 2 teaspoons ground allspice
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cumin
  • 1/2 teaspoon grated nutmeg
  • 2 tablespoons oil (vegetable oil)
  • 2 tablespoon brown sugar (or brown sugar splenda)
  • 1/3 cup fresh lime juice
  • 3 pounds chicken wings (drumettes)

How to Make

  • Step 1: Put all the ingredients except wings in a blender & process until smooth.

  • Step 2: Place wings in a bowl or zip lock bag & pour the marinade over the wings.

  • Step 3: Make sure the wings are all well coated.

  • Step 4: Place in fridge for 8 hours or overnight.

  • Step 5: Preheat oven to 450F.

  • Step 6: Place wings on an aluminium lined oven proof tray that has been sprayed lightly with oil.

  • Step 7: Reserve the marinade.

  • Step 8: Bake in preheated oven for 25 minutes.

  • Step 9: Brush wings with reserved marinade & turn the wings Bake apprx 15 minutes.

  • Step 10: Turn the wings again brush with remaing marinade, continue baking until the wings are done & appear carmelized (10 minutes)..Internal temp 165f.

  • Step 11: Rest wings for 5 minutes.

  • Step 12: Serve & enjoy.
