Step 1: Preheat the oven to 200C.
Step 2: Cut the whole pastry sheet into 16 squares and half sheet into 8 squares and line each hole of a 12 hole patty pan with a square of pastry, keep remaining squares chilled.
Step 3: Add 1 teaspoon of the relish and 10 grams of the cheese to each pastry case and bake for 10 minutes or until pastry is golden puffed.
Step 4: Remove tarts from tin and repeat with remaining ingredients.
Step 5: Garnish with a sprig of thyme and serve warm.
