Ingredients

The ingredients are:
  • 6 steaks (3 pounds) beef round (8 ounces each, 1/2" thick)
  • Salt and pepper
  • 6 tablespoons butter (or lard)
  • 1 yellow onion, chopped (large)
  • 2 carrots, peeled and cut into thin strips
  • 1 tablespoon paprika
  • 3 tablespoons all-purpose flour
  • 2 cups beef broth (hot)
  • 1/2 teaspoon grated lemon rind
  • 1 cup sour cream
  • 2 tablespoons chopped parsley
  • 2 stalks celery (cut into thin strips)

How to Make

  • Step 1: Pound steaks, season with salt and pepper.

  • Step 2: Heat butter over medium/high in a skillet and saute steaks quickly to brown on both sides( about 2 minutes per side)- remove steaks and set aside.

  • Step 3: To the skillet, add onions, carrots and celery - saute while stirring for about 5 minutes.

  • Step 4: Add the paprika and flour, blend well and add the hot broth, stir constantly until smooth.

  • Step 5: Add the lemon rind, cover the pan and simmer on low for 10 minutes.

  • Step 6: Add the steaks to the pan, cover and simmer until the steaks are tender ( about 1 hour).

  • Step 7: Remove the steaks and set aside, strain the sauce/vegetables and return to the pan, then blend in the sour cream.

  • Step 8: Return the steaks to the pan and heat through, add the parsley and serve.
