Ingredients

The ingredients are:
  • 4 cups rice cereal (Erewhon Crispy Brown Rice Cereal)
  • 1 1/4 cups almond butter
  • 1/2 cup brown rice syrup
  • 1/2 cup honey
  • 2 teaspoons coconut oil
  • OPTIONAL: Melted chocolate for drizzle

How to Make

  • Step 1: Line an 8x8 baking dish with parchment paper, leaving an overhang so you can lift the bars out.

  • Step 2: Combine almond butter, brown rice syrup, honey and coconut oil in a microwave proof bowl; stir well until combined. Microwave for 30 seconds and stir. It should be more pourable than before.

  • Step 3: Place the rice cereal in a large bowl. Add the almond butter mix and use a large spoon to mix, stirring well until everything is combined.

  • I find it easiest to just use my (clean) hands to mix it all - since the wet ingredients are rather stiff. I mix it, then toss and use my fingers to dissolve the chunks.

  • Step 4: Pour mixture into the prepared baking dish. Use your hands to press it down evenly in the pan. You can use parchment paper if necessary, but it shouldn't be sticky like regular Rice Krispie treats.

  • OPTIONAL: drizzle melted chocolate over the bars. You can melt a handful of chocolate chips with 1/2 tsp coconut oil in the microwave, pausing every 30 seconds to stir, until melted. Put in a baggie and snip the tip to drizzle.

  • Step 5: Before the mixture hardens too much, lift the block from the pan, cut into 2 inch squares using a hot knife, and enjoy!
