Ingredients

The ingredients are:
  • 1/2 cup couscous (dry)
  • 1/2 cup water (boiling)
  • 1/2 cup parmesan cheese, grated
  • 750 grams chicken tenderloins (halved lengthways, 12 tenderloins)
  • 2 avocado, chopped
  • 250 grams grape tomatoes (halved, 1 punnet)
  • 2 green onions, thinly sliced
  • 1 tablespoon lime juice

How to Make

  • Step 1: Preheat oven to 220C/200C fan forced.

  • Step 2: Line a baking tray with baking paper.

  • Step 3: Place couscous in a medium heatproof bowl and pour over the boiling water and then cover with plastic wrap and set aside for 5 minutes.

  • Step 4: Using a fork, fluff couscous to separate grains and then set aside to cool slightly.

  • Step 5: Add parmesan to couscous and season to taste and toss to combine then place onto a plate and then roll chicken tenderloins in the couscous mixture to coat, pressing gently to secure and place on prepared tray and bake for 10 minutes, turning halfway through, or until golden and cooked through.

  • Step 6: Meanwhile, combine avocado, tomato, onion and lime juice in a bowl and season.

  • Step 7: Serve chicken with the salsa.
