Ingredients

The ingredients are:
  • 2 avocado, chopped
  • 1 tablespoon lemon juice
  • 2 roma tomatoes (seeds removed and coarsely chopped)
  • 1 red onion, finely chopped
  • 1/4 cup basil leaves (small leaves)
  • 1 tablespoon parsley, chopped
  • 1 tablespoon oregano, chopped
  • 100 grams low-fat feta cheese (crumbled)
  • 250 grams sourdough bread (8 thick slices)
  • 2 tablespoon olive oil
  • 1 tablespoon olive oil (extra)
  • 2 cloves garlic, halved
  • Balsamic vinegar to serve

How to Make

  • Step 1: Mash avocado and juice in a bowl.

  • Step 2: Combine tomato, onion, basil, parsley, oregano and fetta in a bowl.

  • Step 3: Heat barbecue grill to high.

  • Step 4: Brush bread with oil and add to grill and cook bread for 1 minute each side or until browned and then transfer to a chopping board and rub with garlic and then place on serving plates.

  • Step 5: Spread grilled bread with avocado mixture and top with tomato mixture and drizzle with balsamic vinegar and serve drizzled with extra oil.
