Step 1: Heat a wok or large frying pan over high heat and add oil, swirl to coat base and sides and stir fry beef in 2 batches, for 2 minutes or until browned and transfer to heatproof plate.
Step 2: Whisk the warm water and soy, sweet-chilli and oyster sauces in a jug and add noodles and choy sum to work, stir fry for 2 minutes or until choy sum wilts.
Step 3: Add sauce mixture and toss to combine and then return beef to wok, stir fry for 1 minutes or until heated and combined.
