Ingredients

The ingredients are:
  • 1 pound lean ground beef (90% lean)
  • 3/4 cup chopped cilantro (divided)
  • 1/2 cup yellow onion, finely chopped
  • 1/4 cup scallion, chopped
  • 2 teaspoons minced garlic
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper, fresh gound
  • 1/3 cup low-fat mayonnaise
  • 1 tablespoon fresh lime juice
  • 1 tablespoon chipotle chiles in adobe (chopped)
  • 1/2 cup Monterey Jack cheese, shredded
  • 4 (115 grams) bread rolls (split, toasted)
  • 9 ounces prepared cole slaw (1 cup)
  • Tomato slices (4 large slices)
  • Sweet onion slices (4 thin slices0

How to Make

  • Step 1: Gently mix together beef, 1/2 cup cilantro, 1/2 cup onion finely chopped, scallions,garlic, chili powder, cumin, oregano, salt & Pepper

  • Step 2: Form 4 patties,1/2" thick, cover & set aside in fridge.

  • Step 3: Mix together the mayo, lime juice chipotle chili in adobo sauce Chopped

  • Step 4: Cover & set aside in fridge

  • Step 5: Lightly spray a skillet large enough to hold the 4 patties with olive oil

  • Step 6: Fry the patties over medium high heat (apprx 4 minutes each side or done to your liking

  • Step 7: Add chese to almost ready patty

  • Step 8: Place a patty on a toasted bun, top with 1/4 cup cold slaw, tomatoe slice, onion slice and 2 tablespoons Chipotle Mayo.
