Ingredients

The ingredients are:
  • 1 star anise (whole)
  • 2 cloves, whole
  • 1 cinnamon stick (2-inch piece)
  • 1 teaspoon allspice
  • 1/2 cup red wine vinegar
  • 1/2 cup brown sugar
  • Fresh ginger, finely diced (one 2-inch piece peeled)
  • 1 teaspoon chilli flakes
  • 1 tablespoon whole mustard seeds
  • 1 teaspoon ground black pepper
  • 2 pounds plums (quartered, pitted)
  • 1 small red onion, finely chopped
  • Salt & pepper, to taste

How to Make

  • Step 1: Except for the plums and onions, place all ingredients in a heavy based saucepan and stir over medium-high heat until sugar dissolves then bring to a boil.

  • Step 2: Add the plums/onions & reduce heat to low, cover, and simmer until the chutney thickens and chunky sauce forms, stirring occasionally, this will take about 40-50 minutes. Leave the longer time for a thicker richer chutney.

  • Step 3: Remove the star anise and 2 cloves and season to taste with salt & pepper.

  • Step 4: Pour into hot sterilised jars & seal.
