  • 1/2 cup heavy cream (plus additional for brushing scones)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons firmly packed light brown sugar
  • 2 1/3 cups cake flour (not self-rising)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 6 tablespoon unsalted butter (cold, cut into bits)
  • 1/2 cup raisins
  • Granulated sugar, for sprinkling scones

How to Make

  • Step 1: Preheat oven to 400°F.

  • Step 2: In a bowl whisk together 1/2 cup cream, egg, vanilla, and brown sugar until combined well. In another bowl stir together flour, cinnamon, salt, baking powder, and baking soda and blend in butter until mixture resembles coarse meal. Stir in raisins and cream mixture with a fork until mixture just forms a sticky but manageable dough. On a lightly floured surface knead dough gently and cut into 6 wedges. On an ungreased baking sheet brush scones with additional cream and sprinkle with granulated sugar. Bake scones in middle of oven 15 to 18 minutes, or until golden.
