Ingredients

The ingredients are:
  • 1 1/2 pounds pork tenderloin (trimmed of fat, 680 grams)
  • FOR MARINADE
  • 1/2 cup frozen apple juice concentrate (thawed)
  • 2 tablespoons honey mustard
  • 2 tablespoons minced fresh rosemary
  • 1 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 1 large shallot, minced
  • 1/4 teaspoon freshly ground black pepper

How to Make

  • Step 1: Combine all marinade ingredients in a small bowl.

  • Step 2: Pour marinade over pork in a glass baking dish or large heavy-duty plastic bag.

  • Step 3: Turn pork to coat evenly with marinade.

  • Step 4: Marinate for 2 hours in refrigerator.

  • Step 5: Preheat grill to medium-high setting.

  • Step 6: Brush grill rack lightly with oil.

  • Step 7: Remove pork from marinade (reserve) and cook over hot coals for about 15 minutes, turning several times and basting frequently with reserved marinade.

  • Step 8: The outside should be nicely browned and the inside should still have a trace of pink.

  • Step 9: Let pork rest for 5 minutes before carving.

  • Step 10: Slice into 1/2" thick slices and place on a serving platter.

  • Step 11: Bring any remaining marinade to a boil and drizzle over pork.

  • Step 12: Serve immediately.
