Ingredients

The ingredients are:
  • 1 1/2 cups mashed banana (3 bananas)
  • 1/3 cup fat-free yogurt (plain, not Greek yogurt)
  • 1/3 cup tahini (or use my recipe for sesame seed paste: http://www.recipezazz.com/recipe/roasted-sesame-paste-25862)
  • 3 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 6 ounces whole-wheat flour (1 1/2 cups)
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 ounces bittersweet chocolate (chopped baking chocolate)
  • 1 teaspoons sesame seeds (white)
  • 1 teaspoon sesame seeds (black)

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Spray a 9 x 5 inch loaf pan with cooking spray.

  • Step 3: In a large bowl of an electric mixer combine the bananas with the next five ingredients (-eggs); beat with an electric mixer at medium speed until combined. Add sugars and beat until combined.

  • Step 4: In another bowl whisk together the dry ingredients (flour - salt). Add flour mixture to banana mixture beating until combined. Fold in chocolate. Pour batter into pan and sprinkle with sesame seeds.

  • Step 5: Bake for 55-60 minutes or until a wooden pick inserted in the center comes out clean. Cool in pan for 10 minutes on a wire rack. Remove bread from pan and cool completely.
