Ingredients

The ingredients are:
  • 250 grams cherry tomatoes
  • 1 bread (300 gram) baguette
  • 160 grams butter, softened
  • Chives, finely chopped (1 bunch)
  • 2 garlic cloves, minced
  • 2 cos lettuce (gem)
  • 1 large avocado (sliced)
  • 2 celery ribs (thinly sliced diagonally)
  • 100 grams green olives (1/2 cup)
  • 1.2 kilograms cooked shrimp (cooked tiger prawns, peeled, deveined, tail intact)
  • 1/3 cup buttermilk
  • 1/4 cup sour cream
  • 2 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 lime, whole (juiced)
  • 1/4 teaspoon hot sauce (tabasco sauce)

How to Make

  • Step 1: Preheat oven to 200C.

  • Step 2: Line an oven tray with baking paper and place the tomatoes onto the tray and lightly spray with oil and season with salt and pepper and bake in preheated oven for 20 minutes or until softened.

  • Step 3: Meanwhile, cut the baguette into 1cm thick slices, but do not cut right through the bread

  • Step 4: Combine butter, chives, garlic, salt and pepper in a bowl and then spread herb butter on all sides of the bread and then wrap in foil and bake for 20 minutes or until butter is melted and bread is crusty.

  • Step 5: Separate lettuce leaves and arrange onto plates with tomatoes, avocado, celery, olives and prawns.

  • Step 6: Whisk buttermilk, sour cream, tomato paste, Worcestershire sauce, lime juice, and tabasco in a jug and drizzle dressing over salad and serve with garlic bread.
