The ingredients are:
  • FOR DRESSING
  • 2 1/2 tablespoons rice vinegar
  • 2 tablespoons granulated sugar
  • Ramen Chicken seasoning packet
  • Salt and pepper, to taste
  • 4 tablespoons olive oil
  • 1 tablespoon oil (canola oil)
  • FOR SALAD
  • 8 ounces cooked boneless skinless chicken breasts (2 breasts)
  • 2 cups finely sliced green cabbage
  • 2 cups finely sliced red cabbage
  • 1/2 cup sliced green onions
  • 3/4 cup slivered almonds, toasted
  • Ramen Chicken noodles, crushed

How to Make

  • Step 1: For dressing mix together rice vinegar, sugar and Top Ramen seasoning packet, adding salt and pepper to taste. Whisk in oil, 1 tablespoon at a time. Taste dressing and add more vinegar if desired. Let rest, allowing ingredients to blend.

  • Step 2: In a large bowl, shred chicken into bite-size pieces. Add cabbage and green onion. Gradually add dressing, tossing well to coat. Add additional dressing to taste. Add almonds and crushed noodles. Toss gently and serve immediately.
