Ingredients

The ingredients are:
  • 2 pounds fresh spinach
  • 1/2 pound fresh mushrooms
  • 2 tablespoons oil (vegetable oil)
  • 1/2 clove garlic, peeled
  • ½ medium lemon. juice of
  • 1/2 cup shredded low-fat mozzarella cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

How to Make

  • Step 1: Wash spinach well, several times in cool water, enough to remove grit. Discard any damaged leaves and coarse stems.

  • Step 2: Cook in the water clinging to the leaves 5 minutes and drain in colander.

  • Step 3: Chop and let continue to drain.

  • Step 4: Clean (by brushing) and trim mushrooms and slice.

  • Step 5: Heat oil in large skillet, mince garlic and add. Add mushrooms and sauté 2 minutes.

  • Step 6: Add spinach and sauté and mix for 2 minutes longer.

  • Step 7: Sprinkle with lemon juice and add salt and pepper to taste.

  • Step 8: Add cheese and toss for 1 minute to mix.

  • Step 9: Remove from heat at once. Serve hot or cold.
