Step 1: Wash spinach well, several times in cool water, enough to remove grit. Discard any damaged leaves and coarse stems.
Step 2: Cook in the water clinging to the leaves 5 minutes and drain in colander.
Step 3: Chop and let continue to drain.
Step 4: Clean (by brushing) and trim mushrooms and slice.
Step 5: Heat oil in large skillet, mince garlic and add. Add mushrooms and sauté 2 minutes.
Step 6: Add spinach and sauté and mix for 2 minutes longer.
Step 7: Sprinkle with lemon juice and add salt and pepper to taste.
Step 8: Add cheese and toss for 1 minute to mix.
Step 9: Remove from heat at once. Serve hot or cold.
