Ingredients

The ingredients are:
  • 6 large eggs
  • 2 teaspoons mirin
  • 1 teaspoon light soy sauce
  • 1 1/2 tablespoons oil (vegetable oil)
  • 1 avocado, thinly sliced
  • 1 teaspoon lemon juice
  • 1/2 cup mayonnaise
  • 3 teaspoons wasabi paste
  • 200 grams smoked salmon (slices, halved)
  • 1 cucumber (Lebanese cucumber, cut into matchsticks)
  • 3 green onions, thinly sliced
  • 2 radish, finely chopped (small red radishes)
  • Lime wedges, to serve

How to Make

  • Step 1: Grease and line an oven tray with baking paper.

  • Step 2: Whisk eggs, mirin and soy sauce in a large jug.

  • Step 3: Heat 1 teaspoon of the oil in a large frying pan over moderate heat and pour in one-sixth (1/6th) of the egg mixture and cook for 1 minute or until set underneath, turn and cook for further minute or until golden brown.

  • Step 4: Slide onto a heatproof plate and then repeat with remaining oil and egg mixture to make 6 omelettes in total.

  • Step 5: Combine avocado and juice in a bowl,

  • Step 6: Whisk mayonnaise and wasabi in a bowl.

  • Step 7: Spread omelettes with wasabi mayonnaise and then top with salmon avocado, cucumber, onion and radish and then roll up tightly to form a log and cut in half diagonally and serve with lime wedges.
