Ingredients

The ingredients are:
  • 1 1/2 cup sunflower seeds
  • 1/4 cup raisins
  • 1 tablespoon cacao powder
  • 700 grams apples (peeled, cored and finely chopped, 5 apples)
  • 1/4 cup honey
  • 1/4 cup currants
  • 1/4 cup coconut flour
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon juice
  • 2 teaspoons ground cinnamon
  • 1/4 cup shredded coconut (moist)

How to Make

  • Step 1: Preheat oven to 180C/160C fan forced.

  • Step 2: Grease and line a 26cm x 16cm (base measurement) slice pan with baking paper, extending paper at long sides for handles.

  • Step 3: Place the sunflower seeds , raisins and cacao powder in a food processor and process until combined.

  • Step 4: Spoon raisin mixture into a the prepared pan and using a palette knife, spread to cover base and level surface.

  • Step 5: Combine apple, honey, currants, flour, juice and cinnamon in a large bowl.

  • Step 6: Spread evenly over raisin mixture and then sprinkle with coconut and then bake for 30 minutes or until golden brown.

  • Step 7: Cool completely in pan (slice will firm) and then cut into 16 pieces to serve.

  • Step 8: For a change use 400 grams canned, chopped apricots (drained) instead of the apple.
