Step 1: Preheat oven to 180C/160C fan forced.
Step 2: Grease and line a 26cm x 16cm (base measurement) slice pan with baking paper, extending paper at long sides for handles.
Step 3: Place the sunflower seeds , raisins and cacao powder in a food processor and process until combined.
Step 4: Spoon raisin mixture into a the prepared pan and using a palette knife, spread to cover base and level surface.
Step 5: Combine apple, honey, currants, flour, juice and cinnamon in a large bowl.
Step 6: Spread evenly over raisin mixture and then sprinkle with coconut and then bake for 30 minutes or until golden brown.
Step 7: Cool completely in pan (slice will firm) and then cut into 16 pieces to serve.
Step 8: For a change use 400 grams canned, chopped apricots (drained) instead of the apple.
