Step 1: Preheat oven to 220C/200C fan forced.
Step 2: Grease and line an oven tray with baking paper.
Step 3: Peel, core and halve the apple and then slice very thinly.
Step 4: Cut pastry sheet in half and form 2 rectangles and place the pastries on prepared tray.
Step 5: Arrange the apple slices, overlapping, down the centre of both pastries and the brush the apple with butter, sprinkle with cinnamon sugar.
Step 6: Bake tarts for 15 minutes or until golden and serve with warm apricot jam.
