Step 1: In a medium saucepan bring 2 cups of water to a boil and then add sugar and coffee; reduce heat to low and stir until sugar and coffee dissolve. Remove from heat. Let stand until cool - 1 hour.
Step 2: Stir vodka into the coffee syrup. Pour into a large jar. Scrape in seeds from vanilla bean halves and add bean halves to jar; stir to blend. Cover and let stand at room temperature at least 3 weeks or up to 6 weeks. Discard vanilla beans before serving.
