Step 1: Place the fish, curry paste, coriander, fish sauce and lemon grass in a food processor, process until almost smooth.
Step 2: Shape mixture into 8 patties and place on a plate and cover with plastic food wrap and chill for 15 minutes or until firm.
Step 3: Heat oil in a large frying pan over moderate heat and cook patties in batches for 4 minutes each side or until golden brown and cooked and transfer to a heatproof plate.
Step 4: Combine salad mix with the included dressing in a large bowl.
Step 5: Spread base of each pide with mayonnaise and top with 2 fish patties, sweet chilli sauce and salad mixture and then top with extra coriander sprigs, then pide tope.
