Ingredients

The ingredients are:
  • 1 small yellow onion (sliced and separated into rings)
  • 2 tablespoons butter, melted
  • 4 small (1 1/2 pounds) zucchini, sliced
  • 1 can (14 1/2 ounce) finely chopped tomatoes (undrained)
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 30 grams croutons (1 cup)
  • 1/4 cup cheddar cheese, shredded (1 ounce)

How to Make

  • Step 1: Saute the onion rings in melted butter in a large skillet until tender, about 5 minutes. Add the sliced zucchini, tomatoes, salt and pepper. Stir well.

  • Step 2: Spoon the vegetable mixture into a greased 2 quart casserole dish. Sprinkle with the croutons and cheese.

  • Step 3: Cover and bake at 350 degrees for 15 minutes. Remove the cover, and bake an additional 15 minutes or until lightly browned and thoroughly heated.
