Step 1: Saute the onion rings in melted butter in a large skillet until tender, about 5 minutes. Add the sliced zucchini, tomatoes, salt and pepper. Stir well.
Step 2: Spoon the vegetable mixture into a greased 2 quart casserole dish. Sprinkle with the croutons and cheese.
Step 3: Cover and bake at 350 degrees for 15 minutes. Remove the cover, and bake an additional 15 minutes or until lightly browned and thoroughly heated.
