Ingredients

The ingredients are:
  • 1 pound boneless skinless chicken breasts
  • 1 can (398 ml) diced tomatoes
  • 1 can (160 ml) coconut milk (premium)
  • 1/2 cup jasmine rice
  • 1/2 cup water
  • FOR MARINADE
  • Fresh gingerroot (2 inch piece, peeled and grated)
  • 1/4 cup tomato juice
  • 1/4 cup fresh chopped cilantro
  • 2 tablespoons water
  • 2 tablespoons oil (avocado oil)
  • 1 1/2 teaspoon cane sugar (natural)
  • 1 teaspoon dried ground turmeric
  • 1 teaspoon dried ground cumin
  • 1 teaspoon dried ground coriander
  • 1 teaspoon onion powder
  • 1 teaspoon fresh lime juice
  • 1/2 teaspoon sea salt, plus more to taste
  • 1/4 teaspoon cayenne pepper

How to Make

  • Step 1: Place the marinade ingredients in a large re-sealable plastic bag and mix ingredients together; add chicken pieces and swish to coat.

  • Step 2: Place in the refrigerator and marinate for 12 hours or overnight.

  • Step 3: Pour the contents of bag into a 10 inch cast iron skillet, season with more salt to taste and cook over medium-high heat for 5 minutes; turn chicken pieces over, pour in the 1/2 cup water and cook for another 5 minutes.

  • Step 4: Remove the chicken pieces and set aside.

  • Step 5: Pour the remaining ingredients into the skillet and bring to a boil, add the chicken pieces and place in a preheated 350 degree Fahrenheit oven; cook for 30 minutes.

  • Step 6: Remove from oven and serve.

  • Step 7: Enjoy!
