Ingredients

The ingredients are:
  • 6 tablespoons butter
  • 1/8 cup granulated sugar (plus)
  • 3/8 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour (plus)
  • 2 tablespoons all-purpose flour
  • 2 large eggs
  • 1/4 teaspoon finely shredded lemon peel
  • 3 tablespoons lemon juice
  • 1/4 teaspoon baking powder

How to Make

  • Step 1: In small bowl beat butter till softened. Add 1/8 c. sugar and salt and beat till fluffy.

  • Step 2: Stir in 1 c. flour.

  • Step 3: Press dough evenly onto bottom of greased 8x8x2" baking pan.

  • Step 4: Bake at 350' 15 minutes.

  • Step 5: Meanwhile, beat the eggs in mixer bowl and add 3/8 c. sugar, 2 Tbsp. flour, lemon peel, lemon juice, and baking powder. Beat about 3 minutes or till slightly thickened.

  • Step 6: Pour lemon mixture over baked layer.

  • Step 7: Return to 350' oven and bake 25-30 minutes or till edges are light golden brown and center is set.

  • Step 8: Cool and cut into squares (and then into triangles if desired).
