The ingredients are:
  • 3/4 pounds potatoes (2 medium russet potatoes, peeled cut into 1"cubes)
  • 2 tablespoon fresh lemon juice
  • 5 1/2 teaspoons olive oil
  • 1 garlic clove, minced (large clove)
  • 1 1/2 teaspoons oregano (fresh, or 1/2 teaspoon dried oregano)
  • Salt & pepper, to taste

How to Make

  • Step 1: Preheat oven to 425F.

  • Step 2: Combine all the ingredients, mix well to coat all the potato pieces.

  • Step 3: Transfer to greased 1 quart baking dish.

  • Step 4: Bake uncovered for 45-50 minutes or until tender.

  • Step 5: Stir twice.
