  • 2 (4 ounce) tilapia fish fillets
  • 3 tablespoons olive oil
  • 2 sprigs rosemary
  • Lemon slices (4)
  • 2 cups cauliflower, chopped
  • Salt and pepper, as needed

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Lay each tilapia filet on a small piece of parchment.

  • Step 3: Season with salt and pepper, drizzle with 1 tablespoon of olive oil and lay two slices of lemon on each on.

  • Step 4: Lay a sprig of rosemary on each fillet and wrap until closed.

  • Step 5: Put on a baking sheet and bake until done (10-12 minutes).

  • Step 6: While the fish is baking, put the cauliflower in a food processor and process until you have couscous sized granules.

  • Step 7: Heat the remaining oil in a large skillet and add the cauliflower.

  • Step 8: Season with salt and pepper and cook until tender (5-7 minutes), stirring frequently.

  • Step 9: Serve with the fish.
