Ingredients

The ingredients are:
  • 2 pounds potatoes (yukon gold boiling potatoes, peeled and rough chopped)
  • 2 shallots (large shallots, minced)
  • 1/3 cup yogurt, Greek plain
  • 1 tablespoon prepared horseradish sauce (more or less to taste)
  • 3 to 4 tablespoons chicken broth
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: Potatoes ... Cook the potatoes in plenty of salted until fork tender, about 15-20 depending on the size of your potatoes. Drain, and return the potatoes to the pot to dry - you don't want watery potatoes.

  • Step 2: Mash ... I like to use a potato masher for this. Mash until all the potatoes are all broken down. You can mash them as little or as much as you want. Then add in the yogurt, horseradish, and a little of the chicken broth. Mix well, add more broth if you want your potatoes a bit thinner, that is completely up to you. Season with salt and pepper.
