Ingredients

The ingredients are:
  • 1 pound boneless skinless chicken breast (4 breasts)
  • 1 1/2 to 2 pounds sweet potato (3 potatoes)
  • 1 cup white wine
  • 1 cup heavy cream
  • 1/2 cup sliced mushrooms
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • 1/4 cup butter
  • 1/4 cup bread crumbs
  • Basil
  • Oregano
  • Salt
  • Pepper

How to Make

  • Step 1: Using spiralizer make noodles out of sweet potatoes.

  • Step 2: Heat oil in pan and cook noodles and set aside.

  • Step 3: Melt butter in pan and place chicken in pan.

  • Step 4: Sprinkle bread crumbs on chicken, turn over and do same on other side.

  • Step 5: When fully cooked, take out chicken and toss in cherry tomatoes, mushrooms, basil and oregano.

  • Step 6: When sautéed add garlic and be sure not to burn.

  • Step 7: Add wine and heat so almost all evaporates while stirring (this should create a nice caramelized sauce.

  • Step 8: Add heavy cream making sure not to bring to boil.

  • Step 9: Add a bit of flour to thicken sauce and then add chicken.

  • Step 10: Cook for about five or ten minutes more to mix the flavors in chicken well.

  • Step 11: Put sweet potato noodles in bowl, add chicken and pour over sauce.

  • Step 12: Add garnishes such as parmesan cheese, feta cheese or whatever you would like.

  • Step 13: Enjoy!
