Ingredients

The ingredients are:
  • 3 tablespoons brown sugar
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons pineapple juice
  • 4 teaspoons fresh lime juice
  • 2 teaspoons grated fresh ginger
  • 2 teaspoons oil (vegetable oil)
  • 1/4 teaspoon salt
  • 3 large garlic cloves, minced
  • 1 pound boneless skinless chicken breast (cut into 32 bite size pieces)
  • 1 can (398 ml) cubed pineapple (16 cubes 1")

How to Make

  • Step 1: Combine all the ingredients except the pineapple.

  • Step 2: Turn to coat all sides of the chicken.

  • Step 3: Alternating thread 4 chicken pieces and 2 pineaple cubes onto 8 (12") skewers.

  • Step 4: Discard the marinade.

  • Step 5: Place skewers on a lightly oiled broiler pan.

  • Step 6: Cook 6" from heat source for apprx. 10 minutes or until the chicken is done turning a couple of times.

  • Note: If you are making appetizers Make the skewers about 6", use only 1 pineaple cube & 4 pieces of 1/2" chicken piece. You will have 16 appetizers
