Ingredients

The ingredients are:
  • 2 pounds potatoes (boiling potatoes, medium size)
  • 1 yellow onion, peeled and chopped
  • 2 tablespoons all-purpose flour
  • 4 tablespoons olive oil (plus more for drizzling)
  • 2 tablespoons chopped parsely
  • Salt and pepper to taste
  • 1/4 teaspoon ground nutmeg
  • 1 lemon, whole (juice of)

How to Make

  • Step 1: Preheat the oven to 450F.

  • Step 2: Peel and cut the potatoes into long quarters.

  • Step 3: Parboil in salted water for 3 minutes, then drain.

  • Step 4: In a large bowl, mix all of the rest of the ingredients, except for the lemon juice, together - add the potatoes to this and mix.

  • Step 5: Place in a buttered baking dish and drizzle more oil over the top.

  • Step 6: Bake for 20 to 30 minutes or until nicely browned and tender- serve hot.

  • Step 7: Pour lemon juice over the top before serving.
