Step 1: Preheat the oven to 450F.
Step 2: Peel and cut the potatoes into long quarters.
Step 3: Parboil in salted water for 3 minutes, then drain.
Step 4: In a large bowl, mix all of the rest of the ingredients, except for the lemon juice, together - add the potatoes to this and mix.
Step 5: Place in a buttered baking dish and drizzle more oil over the top.
Step 6: Bake for 20 to 30 minutes or until nicely browned and tender- serve hot.
Step 7: Pour lemon juice over the top before serving.
