  • 1 can (14 ounce) artichoke hearts (drained and chopped)
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup mayonnaise
  • 2 garlic cloves (minced)
  • 4 boneless skinless chicken breast halves
  • Salt and pepper to taste

How to Make

  • Step 1: Preheat oven to 375F; spray a shallow baking dish with cooking spray.

  • Step 2: In a bowl, combine artichoke hearts, Parmesan, mayonnaise and garlic.

  • Step 3: Place chicken breast halves in prepared baking dish, sprinkle with salt and pepper, and spread each with 1/4 of the artichoke mixture.

  • Step 4: Bake, uncovered, for 30 minutes or until juice run clear when chicken is pierced.
