Ingredients

The ingredients are:
  • 2 ounces sliced bacon (chopped, 2 slices)
  • 2 tablespoons apple cider vinegar
  • 1 1/2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 1/2 teaspoon brown mustard (I used a lavender mustard)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 8 ounces kale, chopped (about 6 cups, I used pre-packaged baby kale)
  • 1 cup blueberries
  • 1 cup Parmesan cheese, shredded (I used parmesan)

How to Make

  • Step 1: Cook bacon in a skillet over medium heat until crisp; remove bacon and place on paper towels to drain, but reserve 1 tablespoon drippings in skillet.

  • Step 2: Over low heat whisk in the next 6 ingredients (-pepper) until warm.

  • Step 3: Place kale in salad bowl and toss with dressing. Add cheese and blueberries and toss.
