Ingredients

The ingredients are:
  • 1 1/2 cups oats (old-fashioned)
  • 1/2 cup shredded coconut (unsweetened and dried)
  • 1/2 cup almonds, chopped
  • 1/2 cup pumpkin seeds (unsalted)
  • 1/4 cup buckwheat groats (uncooked, 1/2 cup oats can be subbed)
  • 2 tablespoons oil (canola oil)
  • 2 tablespoons honey
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon

How to Make

  • Step 1: Preheat oven to 375 degrees F.

  • Step 2: In a large bowl combine first 5 ingredients (-buckwheat). In a small bowl whisk together the oil, honey, salt and cinnamon. Add honey mixture to oats mixture, stirring to combine.

  • Step 3: Spread mixture in a single layer on a parchment paper lined baking sheet.

  • Step 4: Bake at 375 degrees F for 20 minutes or until golden; stir once after 10 minutes. Let cool completely.
