Step 1: Place dates in a heatproof bowl, cover with boiling water, stand for 15 minutes or until soft, drain.
Step 2: Combine cashews, almonds and oats in a food processor and process until finely chopped.
Step 3: Add dates, desiccated coconut, sifted cacao powder and oil and process until mixture comes together,
Step 4: Using damp hands, roll mixture into 16 balls.
Step 5: Combine extra desiccated coconut and extra cacao powder on a large flat plate and roll balls in coconut mixture to coat and place on a plate and chill for 30 minutes or until firm.
