Ingredients

The ingredients are:
  • 1 cup chopped dates (fresh, pitted)
  • 1 cup cashew nuts (roasted unsalted)
  • 1/2 cup blanched almonds
  • 1/2 cup rolled oats (traditional)
  • 1/2 cup desiccated coconut
  • 1/3 cup desiccated coconut (extra to coat)
  • 1/2 cup cacao powder (sifted)
  • 1 tablespoon cacao powder (extra to coat)
  • 14 grams coconut oil (1 tablespoon)

How to Make

  • Step 1: Place dates in a heatproof bowl, cover with boiling water, stand for 15 minutes or until soft, drain.

  • Step 2: Combine cashews, almonds and oats in a food processor and process until finely chopped.

  • Step 3: Add dates, desiccated coconut, sifted cacao powder and oil and process until mixture comes together,

  • Step 4: Using damp hands, roll mixture into 16 balls.

  • Step 5: Combine extra desiccated coconut and extra cacao powder on a large flat plate and roll balls in coconut mixture to coat and place on a plate and chill for 30 minutes or until firm.
