Ingredients

The ingredients are:
  • 220 grams reduced-fat frozen puff pastry (thawed, 2 sheets)
  • 125 grams frozen chopped spinach (thawed)
  • 300 grams lean ground pork (extra lean mince)
  • 3/4 cup grated low-fat cheddar cheese
  • 1/2 red capsicum, finely chopped
  • 1 cup breadcrumbs (soft fresh wholegrain)
  • 2 egg whites
  • 1 1/2 tablespoons grated Parmesan cheese (freshly grated)
  • Reduced-sugar tomato sauce, to serve

How to Make

  • Step 1: Preheat oven to 210C/190C fan forced.

  • Step 2: Grease and line an oven tray with baking paper.

  • Step 3: Cut each pastry sheet in half.

  • Step 4: Using hands, squeeze excess liquid from spinach.

  • Step 5: Combine pork, spinach,, cheddar cheese, capsicum, breadcrumbs ad one of the egg whites in a large bowl.

  • Step 6: Divide mixture into 4 portions and then arrange a portion of pork mixture along centre of each piece of pastry and then roll pastry over filling to form a log.

  • Step 7: Using a sharp knife, cut each log into 4 pieces, place on prepared tray, seam side down and brush tops with remaining egg white.

  • Step 8: Sprinkle with parmesan and bake for 25 minutes or until golden brown and cooked.

  • Step 9: Serve with tomato sauce.
