Step 1: Preheat oven to 210C/190C fan forced.
Step 2: Grease and line an oven tray with baking paper.
Step 3: Cut each pastry sheet in half.
Step 4: Using hands, squeeze excess liquid from spinach.
Step 5: Combine pork, spinach,, cheddar cheese, capsicum, breadcrumbs ad one of the egg whites in a large bowl.
Step 6: Divide mixture into 4 portions and then arrange a portion of pork mixture along centre of each piece of pastry and then roll pastry over filling to form a log.
Step 7: Using a sharp knife, cut each log into 4 pieces, place on prepared tray, seam side down and brush tops with remaining egg white.
Step 8: Sprinkle with parmesan and bake for 25 minutes or until golden brown and cooked.
Step 9: Serve with tomato sauce.
