Step 1: In a 4-quart slow cooker combine the first four ingredients (through pumpkin pie spice). Cover and cook on low for 3 to 4 hours. If desired, stir in liqueur.
Step 2: Serve immediately or keep warm, covered, on warm or low up to 2 hours.
Step 3: Top servings with caramel whipped topping and additional pumpkin pie spice and/or caramel topping.
Step 4: In a chilled bowl beat cream and caramel topping with a mixer on medium until soft peaks form.
