Ingredients

The ingredients are:
  • 1 bag (1 pound) frozen shrimp (large uncooked shrimp, 30 to 40 shrimp per bag)
  • 1 cup coconut water
  • 140 grams jasmine rice (1 cup)
  • 1 cup kidney beans (canned, rinsed)
  • 20 grams chopped gingerroot (peeled)
  • 2 garlic cloves, chopped
  • 1 teaspoon coconut palm sugar
  • 1 teaspoon salt
  • 2 teaspoons chicken bouillon granules
  • 14 grams coconut oil (1 tablespoon)
  • 1/2 teaspoon dried ground allspice
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon dried thyme
  • Cayenne pepper, dash
  • Ground cinnamon, dash
  • Nutmeg, dash

How to Make

  • Step 1: Crush together the chopped ginger, garlic, palm sugar and salt with a mortar and pestle until you have a paste and no chunks left.

  • Step 2: Mix the paste with the bouillon granules, coconut oil, allspice, onion powder, ground pepper, cinnamon and nutmeg; pour this mixture into the rice cooker.

  • Step 3: Add the remaining ingredients and stir to combine.

  • Step 4: Place lid on rice cooker, start the rice cooker and allow it to run its course.

  • Step 5: Fluff rice and serve.
