Ingredients

The ingredients are:
  • 10 ounces ground beef (or pork or combination)
  • 4 ounces yellow onion (1/2 onion, chopped)
  • 2 pounds potatoes (gold potatoes, boiled and peeled - diced)
  • 5 ounces bacon (4 pieces of thick cut bacon, crumbled)
  • 1/2 cup shredded cheddar cheese (or mixture of Monterey Jack and cheddar)
  • Salt and pepper to taste
  • FOR SAUCE
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 1/4 cup milk
  • 1/2 cup sour cream
  • Salt and pepper, to taste

How to Make

  • Step 1: Boil and dice potatoes (I peel them).

  • Step 2: Saute onion i1 tablespoon oil and remove to a bowl.

  • Step 3: Cook ground meat and drain.

  • Step 4: Layer in oiled 2 qt casserole dish - potatoes, meat, sauce, 1/2 cheese, and 1/3 of the bacon.

  • Step 5: Repeat but hold cheese and bacon until the last 10 minutes of baking.

  • Step 6: Bake covered in a 375F oven for 30 minutes.

  • Step 7: Uncover, add cheese and bacon and bake uncovered for 10 minutes or until cheese is lightly browned.
