Step 1: Melt the bacon drippings in a heavy bottom pot and add the onion and garlic; cook until onion begins to soften.
Step 2: Add water, celery ends, potatoes, lobster meat with brine juice, baby clams with the juice, whitefish, chipotle pepper and dried thyme; bring to a boil, reduce heat and simmer for 30 minutes or until fish and potatoes are cooked.
Step 3: Stir in the cream, warm through and serve.
Step 4: Enjoy!
