  • 2 cans (16 ounce) stewed tomatoes (Italian style)
  • 1 carrot, diced
  • 1 medium yellow onion (diced)
  • 1 tablespoon basil (dried)
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste
  • 4 tablespoon parsley flakes (dried)
  • 360 to 450 grams habanero chile peppers (8-10 orange peppers, chopped with seeds included)
  • 1 chile pepper (green New Mexico chile, chopped with seeds included)
  • 5 garlic cloves, pressed
  • 1 can (8 ounce) crushed pineapple
  • 1 tablespoon white vinegar
  • 4 tablespoon chopped cilantro (fresh, optional)
  • 4 tablespoon chopped mint (fresh, optional)

How to Make

  • Step 1: Wear gloves when working with habenero peppers.

  • Step 2: Combine all ingredients in a large sauce pan and simmer over low heat for 15 minutes to blend the flavors.

  • Step 3: Transfer to blender, and puree for 15 seconds or until salsa appears chunky but well blended.

  • Step 4: Serve cold or hot.
