Step 1: Place onion, carrot, apple, pork mince, sage, egg and salt and pepper to taste in a medium bowl. Using your hands, combine mixture well.
Step 2: Form mixture into 12 x 1cm thick patties & place the patties onto a sheet of baking paper on a baking tray, cover with plastic and refrigerate for 20 minutes (or until ready to cook).
Step 3: Heat 1/ 2 cm oil in a large frying pan over medium heat. Add patties and cook for 4–5 minutes on each side or until cooked through & drain on paper towel
Step 4: To serve, top toasted muffin or burger bun bases with lettuce, tomato, then drizzle with tomato or apple sauce, then top with muffin or burger bun tops and serve.
